You certainly can here in the U.S., but that would be unprofessional and typically is not done. Typically, professionals give at least a 2 week notice but usually it is much longer. People who work in low-income service jobs sometimes walk away without giving notice. There is no guarantee of work (the employer can fire you at will) so there is no legal requirement to give notice either. Now, each state has different laws and some businesses have unions to protect the employee and the employer which has guidelines to follow so I'm not counting those. Government jobs are different. The employee can walk away but the employer must follow certain rules. It would have to be checked in each state here, but typically, an employee can just walk away with not repercussions other than not having a recommendation from that job.
