I want to give my users the ability to create simple MS Word doc's and populate them with fields using data from my app.

The way that I usually handle this is to create Word templates with Bookmarks and then write a little code to populate the bookmarks using a mapping table that dolds the template name, the bookmark name, and the table.field that is used to populate the bookmark.
