That's a dish that we used to make in Wisconsin when I was a kid. We used the cheese curd that was near to throwing out. BTW, growing up around dairy farms and cheese factories, we used to run to the closest factory and buy a huge bag of cheese curd every now and then... It wasn't until I was in my twenties that I learned everyone else was making it with chili or brown gravy and melted cheese.
