What we would like to do is populate this field with DATETIME() whenever the corresponding record gets updated. These tables already have an update trigger defined.

Don't. The datetimes() are for each local clients, and you will get problems with clocks slightly off.
go for numeric or currency field incremented from a master table if connected / not road warrior,
add flag notice if running disconnected. get a hint from MS-SQL implementation of rowversion().
