I have not used Ubuntu as a server using samba for Fox. I normally use Fedora or openSUSE. That said, I have only one client left that is using Linux as a Fox file server. I haven't seen any issues with one exception - security. Since I never could determine what was causing a strange disconnect or a permission denied - I just shotgun the problem by granting everyone access. Yes I know the security is compromised - but it works.

BTW the other Linux users have dropped Fox and are either using xTuple or python. I still use Samba as a general file storage solution. I also have been using freeNAS which is also based Linux (just use an old PC swap out the drives for new ones). I'll bet it would be a great solution for the older foxpro (dbf based) app that are still in use. I would guess it would solve the SMB issue - I could be wrong but I'd like to try.
