Unfortunately, they can.
On a consulting gig when starting out in the mini world I hit the wrong key and whacked a company's accounts receivable only to learn that they had no backup. I spent the weekend reconstructing them from paper sources.

I always pay by credit card, so no one would have a hard time tracking my eating and drinking habitats.

But I see your point. That data could be used by some bad actors.
