Often the words the actors say don't match the subtitles. The explanation that I've received is that the subtitles are based on a written script. During filming actors/directors may decide to change the wording of a particular line those changes don't make it back into the script which leads the subtitles to diverge.

You are probably right. Which explains why the subtitles are different from the audio. The other question, why the audio sounds strange (could be spoken by Canadian french actors), remains.
