I have little children and a small house, so the wife and I have become very accustomed to watching Netflix with the volume down and english subtitles. Often the words the actors say don't match the subtitles. The explanation that I've received is that the subtitles are based on a written script. During filming actors/directors may decide to change the wording of a particular line those changes don't make it back into the script which leads the subtitles to diverge.

It's particularly common (for us) on English subs of dubbed foreign language shows/movies. I believe this is due to the voice actors doing the dubbing being traditional actors (and native speakers) whereas the dubbed script is very likely something like machine-generated translation. So the actors regularly are asked to recite lines that simply aren't what a fluent speaker would say and instead they voice the line in a way that would sound natural to a fluent speaker but still convey the intended meaning.
