It makes sense that pb and sybase play well together. As for a unix server, I'm not so sure that's true anymore with SQL 7.0. It would also depend on the use of the database. Is it mostly for adds/updates? Then unix may be better, but if you are creating a data warehouse, SQL 7.0 will probably handle that just as well as a unix-based solution.
