It would be straightforward to put my color choices in my system table (SYSTAB). If I had done that, would it satisfy this stated concern?

I can't see this as a concern. To the color-blind user some boxes would appear to have the same color. That's not fatal because the color is only a hint anyway. Why deprive the other 99%?
