You're getting killed by the phone equipment. Take a look at using one of the voice modems with DSP to capture the voice off the phone line - I played around with Zoom's 56K voice modem and found it worked better than processing through a Creative Labs SoundBlaster Live! Value for recording phone conversations. You might also consider the Microsoft Phone or similar telephony product.
