I don't think you can. I'm pretty sure that when the Win2k install gets to the "upgrade FS format" portion that it warns you that if you convert those drives, you will have to format them to use with earlier versions of WinNT if you decide to remove Win2k.
If you did a fresh install of Win2k it wouldn't even warn you of this though.
