I would first ask a clarifying question. Do you mean an application that will be used by multiple companies accessing their own data? Or do you intend for the application to be used by some corporation that will be maintianing data for multiple companies?
If you intend this for multiple companies accessing their own data, I would have different data sets [individual schema for each company]. The exception would be if a compilation of data of the multiple companies is also needed for reporting purposes. Then I would have one data set like Barbara suggested.
Also, how important is security of data between companies?
