BTW, today before I even tried to speak she said, that she is sorry, she gave us a wrong contract (previous year) and since it was her mistake, she like us to deduct pay for one day from our next paycheck.

She might mean the whole holiday (which could be 7 or 8 days, depending on her denomination) because she doesn't want to deal with people sending non-kosher for Passover food. She might mean just the holy days (first and last or first two and last two, again depending on denomination), or she might mean just the first or first two because she'll be too tired after the Seder < g >.
