The printer will have defaults for font, etc., which are controlled by front-panel settings. You can change those there to default to non-proportional as long as that does not interfere with other programs using the same printer.

You should also find in the printer documentation a large collection of "escape commands" which allow your program to send specific codes for changing fonts and just about every setting you can imagine.

I can't tell you off the top of my head, but I've done it programmatically on the HP 5si, so it's not too difficult if you can find the correct docs. You might try an internet search on "HP 5si codes" or something like that.
