>I don't think this a scientically proven fact. Our diet has changed dramatically in the last 125 years.
Not just diet but our entire lifestyle. We get much less exercise. Many of us don't exercise as a part of our daily routines any more. 50 years ago we walked more, moved around more. I can sit in my living room all night long and only get up to answer the door when the pizza guy gets there.

>Refined carbohydrates (flour & sugar) are considered by some to be major contributors to cholesterol.
No argument there, but, again, exercise (or the lack thereof) is a much greater contributor.

>And, just because there is cholestoral in a specific food we consume, does not necessarily mean we will absorb it into our system.
Precisely!!!

>...our body has the ability to create cholesterol (at least that is how I understand it).
Precisely!!!

>A point worth considering. The cows have cholesterol, and they eat grass (and no meat at all).
But their diets and lifestyles have not significantly changed.

>>But then, I don't think humanity has seen a cow die of natural causes (heart attack, stroke, etc.) in at least 2000 years.
Maybe because we're busy killing them before they have the chance. When was the last time you heard of a cow dying of natural causes?
