My wife is from Colombia. Her father is a coffee farmer. He has a farm in the mountains outside Cali. My brother-in-law works for the National Coffee Federation of Colombia. His is a taster. He is in charge of huge lab outside Buga where he quality tests all the beans from the region. My last trip to Colombia he and I went to his father's farm in a 1949 Willy's Jeep and picked our own beans. He showed me how to pick them and what to look for. Then we husked them and washed them. We dried them in the sun for a week and took them back to his lab where we hand-picked only the best beans. After that we roasted them and ground them in his lab. I brought back a suitcase stuffed with coffee. The aroma was so delicious people stopped me in the airport asking me if I could have a sample. There is no question that this is the best coffee I'll ever get.
By the way, Juan Valdez is real. He is a farmer from the mountains of Medellin. I met him. I have pictures of him holding my baby son with me standing next to him. He also autographed a Colombian Coffee poster with his picture on it. He is very old and getting ready to retire. They are looking for his replacement. I applied for the job, but they just laughed at me. Gringo ridiculo!
