You might be able to find this switch your looking for using linuxconf. Just type linuxconf at a command window and it should bring up a GUI configurator, and one of the options should be whether to default to a GUI destop when you bootup. If that doesn't work, look at /etc/inittab file and change the switch in that file from 5 to 3.
