I'm not really sure what you're talking about. My understanding is that W2K Server is almost identical to W2K Pro. The user interface is the same. You can disable any services you don't need on Server.
I'm using XP now, and I agree with you...I think I like W2K better. The jury is still out; XP may be more stable.
