Chicken and Gravy

Ingredients:

2 2-1/2 cups cooked shredded chicken
1 1/2 cups chicken broth
1 1/2 cups milk
6 tbs. butter
6 tbs flour
1/8 tsp. fresh grated nutmeg
2 tbs. wine - sherry. marsala or madeira - your preference
salt and pepper to taste

Directions:
In saucepan, melt butter - do not brown. Add flour, stirring quickly to make a roux.
Cook 1 or 2 minutes to cook the flour. Off heat, add broth and milk, stirring constantly. Put back on heat until mixture thickens and boils for 1 minute. Add wine and nutmeg and stir in; add chicken and lower heat to simmer until chicken is heated through stirring occasionally . Salt and pepper to taste.
Serve over biscuits or toast points.
