I am in the same situation myself, and I will tell you my conclusion and how I came to it. In my case the printer drivers for the thermal printers made the printout so slow, that it using the driver simply was not an option. After thorough testing, I found that to get the fastest printout and easiest setup, generating a label description file and COPYing it to the printer was the way to go.

I also chose to go for printers from one specific supplier, and making that the only choice for my customers. If a customer insists on using another printer, OK with me, but then this customer also must pay for the rewriting of my program. So far no customers has even asked, since we get a big discount on the printers and are able to sell them to our customers at a very good price. Our business is software, not hardware, and we consider the sale if the printers as a service to our customers.
