In Outlook, in your main Mailbox, you can right click on a folder and select Properties. In Properties there is an AutoArchive tab where you can set automatic archiving properties for that folder. It can Archive to a PST.

You can also do this under the File menu in Outlook - Select the Archive option. In there you can set archiving properties per folder or globally.
