Consider checking after the meal - my BG peaks about 75 minutes after a meal.
Large Blood Glucose spikes cause damage, and you can't see the spike if you measure BG many hours later.

Cream has no carbs, so for me it works fine.
My lipids and cholesterol are more affected by weight and weight loss than by dietary fats.
According to Bernstein's book, this is the case for most people, excepting the unlucky few with genetic hypercholesterolemia.
